Peaches and Prosciutto Crostini

by Chan Vu, Sep 25 2015

Here in Georgia, we take our peaches very seriously. After all, peaches are our pride and joy. There are thousands of recipes to make from our sweet Georgia peaches. So when National Peach Month arrives, we have to celebrate with a fun and tasty recipe.

When you get together with friends this month, serve my peaches and prosciutto crostini. It's perfect for any celebratory get together. This recipe was inspired by one of my favorite Atlanta restaurants and hometown state of Georgia's icon - peaches! What a wonderful way to enjoy this monumental fruit!

Peaches and Prosciutto Crostini (Make 8-10 crostinis)
  • 1 peach, thinly sliced
  • 3 tablespoons dark brown sugar
  • 1/2 stick of sweet butter
  • Smoked prosciutto
  • Honey Goat CheeseFresh baguette, sliced

Directions:
1. In a heated skillet, melt 2 tablespoons of butter.
2. Add peach slices and brown sugar. Stir until sugar is melted and peaches are soft but al dente. Take off heat.
3. Cut baguette and spread remaining butter and toast it until crispy golden.
4. Spread honey goat cheese on crostini.
5. Lay one slice of prosciutto on each crostini.
6. Top each crostini with two to three slices of caramelized peaches.
7. Drizzle a little caramelized peach sauce on top and serve.
Sink your teeth in the yummy layers of sweet, salty and creamy goodness. Your guests will love it.
