Dill Asparagus Fries

It's summertime, and what's better than grilling out in the warm evenings and sitting down to a delicious hamburger, grilled veggies, and fries. If you're looking for a healthier option, that still allows you to enjoy summer evenings and not sacrifice any flavor, then these are the asparagus fries are for you.

They make a great alternative to traditional potato fries. They are full of nutrition, providing a full vegetable serving, and so easy to make. 
Dill Asparagus Fries
Ingredients:
- 1 lb. asparagus, washed and trimmed
- 1/2 cup whole wheat flour
- 1 cup panko bread crumbs
- 1/2 cup freshly grated havarti dill cheese
- 1 egg
- salt and pepper to taste
Preheat the oven to 425 F. In a bowl, combine the flour, bread crumbs, cheese, and salt and pepper. In another bowl, crack and stir the egg. Dip each asparagus stem into the egg, and then coat it in the flour mixture. Place each asparagus side by side on a pan. Before placing into the oven, grate a little fresh cheese over the asparagus. Bake for 25 minutes. Remove from heat and serve immediately.
Serve with honey mustard, and enjoy!
