Edamame Hummus

Edamame hummus is light, delicious, and so easy to make. Whether putting together an appetizer for a summer cookout, or preparing a sandwich spread for lunch by the pool, this recipe is perfect. The edamame gives a fun break from your standard hummus - not to mention the added health benefits and protein. 

Ingredients:
  • 2 cups frozen edamame, defrosted
  • 1 1/2 cups canned chickpeas (or garbanzo beans)
  • 1/4 cup tahini paste
  • juice of 1/2 lemon
  • 1 large garlic clove
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1 tbsp. extra virgin olive oil
  • 2 tsp. fresh thyme, chopped
  • 2 tsp. fresh parsley, chopped 
  • 1/2 tsp. sea salt
In a food processor, chop the garlic. Next, add the edamame, chickpeas, tahini paste, lemon juice, olive oil, and spices. Process until fully combined and smooth. Serve with crackers or corn chips and garnish with a leaf of parsley.
