Spinach Pasta Salad with Sauvignon Blanc Vinaigrette Dressing

I rarely have extra wine after a day or two but when I do, I love using it to make salad dressing. My newest creation is a Sauvignon Blanc Vinaigrette. Today on Atlanta & Company I shared 6 ways ways to use that left over wine including the salad dressing recipe below. Watch the segment here! Ingredients
  • 1/2 cup olive oil
  • 1/2 cup Sauvignon Blanc
  • 1/3 cup grated parmesan cheese
  • 1 tbsp. dijon mustard
  • 2 garlic cloves, minced
  • 1 tsp. dried oregano
  • 1 pinch of salt
  • 1 pinch of pepper
Whisk ingredients together and toss with spinach, tricolor pasta, cherry tomatoes and bacon! The above recipe makes enough dressing for 3-4 large salads. If you have extra, you can store it in a sealed container in the refrigerator for up to 7 days.
